    Extra Virgin Olive Oil

    In the period between November and March, our olives are harvested in the family olive groves upon the Ligurian hills of Stellanello,and carried straight to the oil mill where they are subject to a cold treatment with low temperature which guarantees the preservation of its organoleptic characteristics. Our Extra Virgin Olive Oil is produced in a high quality and hygienic environment, characterized by a very low acidity, by a soft fruity flavour and by a sensation of sweetness that lets it be appreciated in the whole world. Thanks to its immense delicacy, we suggest it should be used raw especially with fish-based courses; obviously, it is the unreplaceable ingredient of our Ligurian pesto.
